Oven Baked Grilled Cheese Sandwiches

Snowy weather means it’s time to bring back one of my favorite easy school night meals…Grilled Cheese sandwiches and homemade tomato soup.

With 5 kids that are all currently ALL wrestling, we go through a ton of grilled cheese sandwiches.

I usually use a nonstick electric skillet to make our sandwiches. While 4 sandwiches fit comfortably at a time, for our family of 7 it felt like I was a short-order cook. And, I swear my kids were eating them faster than I could make them. More often than not, when I’d sit down to eat my own sandwich, I’d forget that I had some still cooking and end up with some extra dark sandwiches.

Earlier this week I planned to make Grilled Cheese Sandwiches and Tomato Soup, only to remember that our nonstick electric skillet was broken.

So, in an act of pure desperation, I decided to make our Grilled Cheese Sandwiches in the oven.

I was left with perfectly golden and crisp, deliciously cheesy Grilled Cheese sandwiches.

And I was able to make 12 at once in 12 minutes!

Mind. Blown.

Because you can make as few as one or two sandwiches or as many as 12 at a time (6 sandwiches on each cookie sheet) I didn’t list specific numbers in the recipe.

Oven Bake Grilled Cheese Sandwiches
Prep Time: 5 min Bake Time: 12

Ingredients
Sliced Bread
Salted Butter (or Mayo)
Slices of Cheese (I prefer a mix of Colby Jack and Sharp Cheddar)
Non-Stick Cooking Spray

  1. Spray your cookie sheet with non-stick cooking spray and set the oven to 425 degrees
  2. Butter one side of each slice of bread.
  3. Place one slice of bread, butter side down on a cookie sheet.
  4. Put two slices of chees on top of the bread.
  5. Top with another slice of bread, butter side up.
  6. Place in oven and bake for 12 minutes, flip your sandwiches hallway to ensure they are perfectly toasted on both sides.

NOTE: It has been suggested that you can place another cookie sheet on top of the sandwiches and skip flipping them halfway. I haven’t tried this out, but wanted to include it in the recipe in case you want to!
