European Salad

I absolutely had no idea what to call this salad. It’s one I often make for lunch, and I created it because it has all my favorite flavors from my trips to Europe! Every time I have this “European Salad”, it takes me back to the beaches of Nice, France, and the hustle and bustle in the streets of Rome. Like most salads, it’s easy to add your favorite flavors or customize it for different family members. Scroll to the end of the recipe for some suggested add-ons.

European Salad
Time to Make: Under 10 Minutes Serves: 1
Ingredients
2 1/2 cups Spring Mix (baby lettuce, arugula/rocket, spinach)
1/4 cup pitted Greek olives
1/4 cup crumbled Feta Cheese
4-6 Medjool Dates pitted and cut up
1/2 cup cherry tomatoes halved
2-4 TBSP of Balsamic Vinger
Salt and Pepper to taste
1. Combine all of the ingredients and enjoy your salad!
ADD-ONS
Nuts (I prefer Walnuts or Pistachos)
Avacado
Sunflower Seeds
Fresh Mozerella Cheese
Cooked and Crumbled Bacon
Cooked Shredded Chicken
Garlic Croutons
Dried Cranberries
Orange Slices
Dried Cherries
Hard Boiled Egg
