Old Fashioned Beef Stew

Nothing fills you up like a bowl of Old Fashioned Beef Stew! It’s perfect for a cold Wyoming winter day, and the leftovers always seem to hit the spot. I love to serve it with Beer Bread or Sweet Cornbread, but it absolutely is a meal in itself. For those of you who are hunters like us, I encourage you to substitute the beef with elk or deer!
Old Fashioned Beef Stew
Prep Time: 15 Minutes Cook Time: 1 hour Serves: 8-10
Ingredients
2lb Beef Stew Meat chopped into small pieces (substitute Elk or Deer)
32 oz of Beef Broth
1 Medium Onion minced
3 cloves Minced Garlic
5 Potatoes Chopped
1 Bag Mixed Frozen Vegetables
1 can Fire Roasted Diced Tomatoes
1 Can Tomato Sauce
2 tsp Herbes De Provence
Salt and Pepper to taste
- Saute meat and onions in a large soup pot.
- Combine all the remaining ingredients in the large soup pot.
- Stir regularly and bring to a rolling boil.
- Let boil for 10 minutes.
- Turn the heat down to low and let the stew simmer for 45 minutes or until the potatoes are cooked.
- Leave stew on a low heat setting and simmer until ready to serve.
NOTE: This soup can be made in a crock pot. Put all the ingredients in your crock pot and set it for the desired time. There is no need to cook the meat ahead of time.
