Chicken Parmesan Casserole

Chicken Parmesan Casserole is a meal that I have made a few times over the years, but I only recently took the time to perfect it so that I was sure it was ready to share with you.

Chicken Parmesan is one of The Cowboy’s favorite meals, but it’s absolutely not one that I have time to make on a weeknight.

Sometimes, I crave red sauce and pasta, but the old standby of spaghetti or baked ziti doesn’t appeal to me. It was out of this need for red sauce “but not spaghetti” that this recipe was first created.

If you’d like to make this recipe a bit more robust, sautee some vegetables  (sweet peppers, onions, tomatoes, zucchini) with olive oil and garlic and add them to the mix before you top it and bake it.

NOTE: This recipe is excellent when you have leftover shredded chicken from making another meal, so make sure you add it to your meal plan rotation!

Chicken Parmesan Casserole
Prep Time: 5 min Cook Time: 20 min Bake Time: 20 min
Serves: 8-10

Ingredients
2-3 Large Chicken Breasts
2 24 oz jars of Marinara Sauce
1/4 cup of Parmesan Cheese (shredded or powdered)
1/4 cup of Bread Crumbs
1 cup shredded Mozzarella Cheese
16oz Box of Pasta (penne, ziti, or rotini is fine)

  1. Turn oven on to 375
  2. Place Chicken Breast in a glass baking dish and bake until cooked (approx 20 min)
  3. While the Chicken Breast is baking, cook pasta per the directions on the box. Drain and put into a 9×13 glass casserole dish sprayed with nonstick spray.
  4. Shred Chicken and combine with pasta, one and a half jars of red sauce, and parmesan cheese. Mix well.
  5. Cover the mixture with the remaining red sauce and spread evenly.
  6. Sprinkle top evenly with Bread Crumbs
  7. Cover Bread Crumbs and Sauce evenly with Mozzarella Cheese
  8. Sprinkle the top with a few more Bread Crumbs (not too many)
  9. Place the Casserole in the oven and bake for 20 minutes or until the cheese is golden and the bottom ingredients are bubbling.

One of the reasons I like to make dishes like this is because while it DOES have a bit more bake time, it’s incredibly easy. It’s a good one to make while at the same time puttering around and cleaning up your kitchen! #multitaskingmama

    I might try it, but just with the whole chicken brests & cheeses (& maybe some zucchini & mushrooms), so it’s low carb. Might have to leave out the bread crumbs for that too… I think it should still be good.
