Summertime Tortellini Pasta Salad

This Summertime Tortellini Pasta Salad is something that The Cowkids and I have as an entire meal, but I think most people would consider it a side dish.
Truthfully, when I make this recipe, I use a little bit of this and a little bit of that. I’ll try to get the measurements right, but it’s okay if you follow the rule of “this looks about right” when making this!
Pretty much anything goes…
NOTE: Leave the Pepperoni out of this recipe for a great vegetarain dish.
Summertime Tortellini Pasta Salad
Prep and Cooking Time: 15 min Serves: 6-8
Ingrediants
2 lb bag of Frozen Cheese Tortellini
2 cups Spring Mix Lettuce
8 oz of Fresh Mozzarella Chopped
3 large Tomatoes Chopped or 3 cups Cherry Tomatoes halved
1 cup of Pepperoni Chopped
1/4 cup of Fresh Basil Leaves Minced
2 tbs Parmesan and Herb Seasoning
4 Tbsp Olive Oil (you may want more)
Salt and Pepper to Taste
- Boil water and cook Frozen Tortellini following directions on the bag.
- While the Tortellini is cooking, chop up the Lettuce, Mozzarella, Basil Leaves, Tomatoes, and Pepperoni and combine them in a large bowl.
- When Tortellini is cooked, drain and rinse with cold water until it’s cold.
- Combine all the ingredients in a large bowl, stir well.
- Serve cold.
Add Ins:
Sprinkle Fresh Parmesan Cheese on Top
Sweet Peppers
Bacon instead of Pepperoni
Fresh Spinach
