One Pot Creamy Dijon Chicken Dinner

One Pot Creamy Dijon Chicken Dinner was an unexpected win one evening last month in our house. I was desperate to answer the “what’s for dinner?” question with something other than “spaghetti” or “tacos.” I also had two bags of broccoli and cauliflower that would go bad the next day or so.
So, like most of my recipes, this one was created out of pure desperation!
Thankfully, this recipe was enjoyed by the whole family, and it was quickly added to the “make again” list!
You can either serve it as is (we ate it in bowls) or use quick-cooking bags of rice and add them to the final product to make it a bit more sturdy without sacrificing too much time or energy.
Per usual, I have a few possible modifications for you at the end of the recipe.
One Pot Creamy Dijon Chicken Dinner
Cook Time: 30 – 45 minutes Serves: 6-8
Ingredients
5 Medium Potatoes Chopped into Bite-Sized Cubes
1/2 Medium Onion Chopped
4-6 Chicken Breast Chopped
3 Garlic Cloves Minced
1 Tbsp Garlic Butter Herb Seasoning
2 Tbsp of Olive Oil
1/4 Cup Dijon Mustard
1 Cup Chicken Stock
1 Cup of Heavy Cream
Salt and Pepper to taste
1. Put Chicken, Potatoes, Onions, Garlic, and Seasonings (NOT Dijon Mustard) in a large pot. Turn the heat to medium-high and drizzle with Olive Oil.
2. Cover and stir occasionally. Cook for approximately 10-15 minutes or until the chicken is cooked.
3. Add Chicken Stock, Cream, Dijon Mustard, and Vegetables and cook until liquid begins to boil.
4. Cover the pot, turn the heat down to medium-low, and let the mixture simmer for 15-25 minutes, or until the potatoes can easily be pierced with a fork. Stir occasionally.
5. Serve as is or over rice.
Modifications:
Use Zucchini, Squash, or Sweet Peppers
Replace Chicken with Steak
Top with Parmesan Cheese when serving
This CAN be made in a crock pot; you may want to add an extra 1/4 cup of cream and chicken stock.

Without adding the cauliflower and broccoli? (is what I meant to say)
I think if you don’t have the veggies you’ll need to bulk it up with more potatoes and/or have it on top of rice!
