Sheet Pan Pancakes

“Sheet Pan Pancakes” is a recipe that is being used more and more often in our busy home full of teenagers and tweens!
I’m trying to be better about sharing more of my everyday recipes with you.
I often feel that their simplicity and my lack of photography skills ensure that nothing I make looks glamorous or perfect.
Which, of course, makes me feel like it’s not something I should post.
Perhaps it’s my blogger version of “imposter syndrome”?
But fancy or not, Sheet Pan Pancakes are a quick and easy way to feed a large group.
And you can easily make as many variations of pancakes as you’d like.
I’ve included a list of add-ins in the ingredient list that you may want to try!
Sheet Pan Pancakes
Prep Time: 5 Minutes
Bake Time: 15 Minutes
Serves: Makes 10 Thick Pancakes
Ingredients
3 cups Pancake Mix (I use Bisquick)
1 1/2 cups of Milk
3 TBS of Vegetable Oil
3 Eggs
Nonstick Spray
Add-Ins:
Chocolate Chips
Fresh Fruit Cut Up to Small Bites
A Sprinkling of Cinamon and Sugar
A Sprinkling of Brown Sugar
Chopped Walnuts
Flax Seed
A Sprinkling of Granola
- Preheat Oven to 425
- Spray your Sheet Pan with nonstick spray (please make sure you have one with ridged sides, not a flat cookie sheet)
- Combine Pancake Mix, Milk, Vegetable Oil, and Eggs in a large bowl and stir until blended.
- Pour mixture into sheet pan.
- Place your add-ins on top of the pancake batter. NOTE: Do not mix the larger ingredients
(fruit, chocolate chips, nuts) in or push them down. You can use a knife to lightly swirl the Cinnamon and Suger or Brown Sugar into the batter. - Place Sheet Pan into the oven and bake until the top is deep golden brown.
- Take out and cut up into squares and serve warm.
This is an excellent option if you’re looking for a recipe to use as part of your meal planning or to make ahead when you have a busy week. You can make several batches, cut them up, and freeze them in large zip-lock bags to use later.
NOTE: To feed our large family, I double this recipe
