Bumbleberry Crisp

Bumbleberry Crisp is what I make when I want Bumbleberry Pie but don’t have the energy to make a pie crust! It’s all the delicious Summer flavors I love with a thick, crispy topping, and it takes half the effort/energy to make.

WIN!

The best way to eat this is served warm with Vanilla Ice Cream!

NOTE: I make this for my family of 7, so the recipe below is for a Crisp made in a large rectangular glass dish. You can cut the recipe in half for a smaller family and bake in a 9×9 glass dish. Also, feel free to add more or less of a favorite fruit…measurements aren’t exact!

Bumbleberry Crisp
Prep Time: 15 Minutes Bake Time: 30-45 Serves: 8-10

Filling Ingredients
16 oz of Raspberries
16 oz of Blackberries
16 oz of Blueberries
16 oz of Strawberries Cut Up
5 Large Apples Cut Up (you can peel if you want)
1 tbsp Brown Sugar
1/4 cup of flour
3/4 cup of White Sugar

Crisp Topping
2 cups oats
2 cups brown sugar
1 tsp cinnamon
2 cups whole wheat flour (white flour is fine too)
A pinch of salt
3 sticks of butter, melted

  1. Preheat oven to 400 degrees.
  2. Combine filling ingredients and set aside while you make the Crisp Topping.
  3. Spray the glass dish with nonstick spray.
  4. Put the filling into the glass dish and spread it evenly.
  5. Using your hands, sprinkle the Crisp Topping over the Bumbleberry filling. Make sure it is evenly spread to the corners. Lightly press down the topping. There should be no gaps.
  6. Place it into the oven and set the timer for 30 minutes (you may want to place a pan underneath to catch any bubbling juices).
  7. Your Bumbleberry Crisp will be done when the filling is bubbling, and the topping is a dark golden brown.
  8. Serve warm with Vanilla Ice Cream.

    I’m not a huge fan of the seeds in raspberries and blackberries but I might try this with only blueberries and strawberries – I love a good crisp!!
